Lunchbox Idea Featuring Egg Mayo Sandwich
Packing school lunches every day can feel like a challenge—especially when you’re juggling different tastes, busy mornings, and the pressure to keep things both nutritious and appealing. As a mum of three, I’ve learned that simple, reliable recipes and a bit of variety go a long way. Today’s lunchbox is one of our go-to combinations, featuring easy egg mayo sandwiches and a colourful mix of sides.
🥪 Easy Egg Mayo Sandwiches
These sandwiches are quick to make, creamy, and always a hit.
Ingredients:
½ cup mayonnaise
2 boiled eggs
½ tsp salt
½ tsp black pepper
½ tsp onion powder
1 tbsp cream cheese
½ tsp mustard
A squeeze of lemon juice
Hand Full of lettuce
Method:
Start by mixing the egg yolks with mayonnaise, cream cheese, mustard, lemon juice, and seasonings until smooth and creamy. Finely chop the egg whites and lettuce and fold them into the mixture. Spread generously onto fresh bread, slice, and your sandwiches are ready to go.
🍓 What Else Went Into the Lunchbox
To keep things balanced and fun, I like to add a mix of textures and flavours:
Yogurt topped with granola and fresh berries
Crunchy carrot and cucumber sticks
Sweet melon and juicy grapes
Fresh apple slices
A few prunes for a natural sweet treat
💡 Lunchbox Tips
Mix textures: Combine creamy, crunchy, and juicy foods to keep things interesting.
Keep it simple: You don’t need complicated recipes—just a few good staples you can rotate.
Keep it colourful: A variety of colours makes the lunch more appealing and ensures a range of nutrients.
